This evening I read through my healthier cookbooks in hopes of finding some sort of energy ball recipe. The plan was to use dates, peanut butter, oats, and some chia. Step one involved getting out the peanut butter but then I saw half a box of rice krispies and then the energy balls were never made.
But these were! Its just a simple little bar but I’m happy to have them to snack on during the week.
It couldn’t be any easier. You melt honey, peanut butter and a spoonful of butter together to make a beautiful peanut butter-ey syrup.
Dump it onto the cereal.
Stir it together (and eat some)
Press it firmly into the prepared pan. FIRMLY! Otherwise it will fall apart.
Melt some butter, chocolate and crunchy peanut butter together for the topping. No regrets. I wasn’t really thinking about being healthy by this point.
Peanut Butter Rice Krispie Bars
1/2 cup smooth peanut butter
1/2 cup honey
2 tbsp butter
Dash of salt
4 cups Rice Krispies
1 cup semi-sweet chocolate chips
3 tbsp crunchy peanut butter
2 tbsp butter
- Grease and line an 8 inch pan with parchment paper. Set aside.
- In a medium saucepan melt together honey, peanut butter, butter and salt. Stir until it becomes a thick syrup. Immediately remove and add to the cereal.
- Stir until the syrup coats the cereal and press it into the prepared pan. Place it into the fridge to set up.
- In a double boiler melt together the chocolate, peanut butter and butter until smooth. Spread over the bars and allow to cool completely before cutting. I put mine in the freezer and then cut it into squares to make it easier.
